Before founding Project Ambrose Consultancy in early 2020, Ambrose was recognized by industry leaders as a world-class beverage director, receiving accolades in Australia (Sydney), the United States (New York), and Hong Kong - in The New York Times, The Sydney Morning Herald, Gourmet Traveller, and most recently, Tatler Asia.


Building an authentic beverage program with finesse is natural to Ambrose - in 2016, he was awarded Gault & Millau Sommelier of the Year in Australia (Finalist) along with 'Best non-alcoholic beverage program in Australia' by The Gourmet Traveller Wine List Awards. The same year, Ambrose was invited to participate in the St. Pellegrino World's 50 Best Restaurants’ '50 Best Somms of the World' program in Melbourne. 

In the U.S., working with the Momofuku Group, Ko** was awarded by The World of Fine Wine publication in 2017 & 2018; Ambrose claimed the title of 'Most Original Wine List in the World', alongside its regional recognition for 'Best Long Wine list' and 'Best Designed Wine List'’ both in the North American region while managing the Momofuku group cellar. 

Ambrose relocated to Hong Kong in the beginning of 2019, where he made waves in the function of Director of Business Development and Communications for a Burgundy specialist. This experience strengthened Ambrose’s market awareness and strategy skills.
